Cinnamon Apple Pancakes

A healthy stack of fluffy Cinnamon Apple Pancakes that will make your kitchen smell like Fall heaven on a weekend!

Is it cinnamon apple or apple cinnamon? I don’t know and don’t really care as long as both those ingredients are in my breakfast! These healthy pancakes are made with oats and whole grains, they’re refined sugar free and dairy-free. So even if you eat half the stack in one sitting I guarantee you’ll feel great afterwards! I’ll leave the serving size up to you 😋

Ingredients:

  • 1 egg beaten
  • 1/2 cup white whole wheat or all purpose flour (60 g)
  • 1/2 cup quick oats (40 g)
  • 1/2 cup unsweetened almond milk (120 g)
  • 1/2 cup unsweetened applesauce (120 g)
  • 1 tbsp any oil (I used avocado oil) (15 g)
  • 1 tbsp maple syrup or honey (21 g)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • dash of salt and vanilla extract
  • 1 medium apple finely chopped (save a couple slices and cook them for garnish if you like!)

Makes 8. Blend together egg, applesauce, milk, oil and syrup. Whisk together flour, oats, salt, cinnamon, baking powder. Mix the two until just combined. Fold in chopped apple. Pour heaping 1/4 cup batter on a greased pan, flip and brown both sides. Serve with greek yogurt (I like to whip it a bit first) and a drizzle of maple syrup. 🍁
