Vegan Brownie Cookies

Did you know that you can make yummy, deeply chocolate-y, melt-in-your-mouth cookies that taste like brownies, but with a tiny fraction of the sugar that’s in most cookies and/or brownies? I didn’t either. This was just a random experiment turned into a chocolate party in my mouth. So the photos and the recipe made it here.

Not to be a mega-nerd about it but these cookies, friends, have 3.5 grams of sugar in them each. You heard right. And they. taste. amazing. They’re my current favorite! I’ve been waking up in anticipation of gulping one of these before I head out the door as a pre-breakfast snack (I like to start my days on a sweet note).

I seriously enjoy them as much as I enjoy brownies. And hey, they don’t have the 30 g of sugar that your typical brownie has so I can have a bunch before lunch. I honestly can’t believe how much I love these. I’m SO glad I started baking you guys. 🙂

Oh, PS. These also happen to be vegan, refined-sugar free, can be nut-free and gluten-free (use GF oat flour) if you prefer.


  • 1/4 cup nut/seed butter (I’ve made them with peanut butter and tahini, both were delicious. Use almond or cashew butter for a more neutral flavor.) (64 g)
  • 2 tbsp coconut oil melted (30 g)
  • 2 tbsp maple syrup (42 g) *you can increase this and cut down the applesauce if you prefer sweeter cookies!
  • 1/4 cup unsweetened applesauce (60 g)
  • 1/2 tsp vanilla extract
  • 1 cup white whole wheat flour (or equal weight all purpose or oat flour) (120 g)
  • 1/4 cup cocoa/cacao/carob powder (24 g)
  • 1/4 cup flax seed meal (you can omit but I really like the flavor) (26 g)
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt

Chocolate coating:

  • 2 tbsp semisweet chocolate chips (30 g)
  • 1/2 tsp coconut oil

Makes 12 cookies. Preheat oven to 350F and line a baking sheet with parchment. Mix together nut butter, oil, syrup, applesauce, vanilla until smooth. Whisk together the flour, cocoa powder, flax meal, baking soda, salt. Combine the two with a spatula (use hands if it’s too crumbly, it’ll come together).

At this point I’ll give you the option to just omit the chocolate coating and fold in 2 tbsp of mini chocolate chips. But the cookies are way prettier with the chocolate drizzle 🙂

Otherwise break off 2 tbsp of cookie dough and roll it between your palms then flatten. Bake for 10 minutes (we’ll underbake these slightly on purpose so they’re soft in the middle like brownies!).

While the cookies are cooling, melt together the chocolate and oil (I use short intervals in the microwave). Using a fork drizzle about 1/2 tsp of chocolate on each cooled cookie. Let them cool again and DIG IN cookie-monster style. Or brownie-monster style. Whichever monster you wanna be is okay with me as long as you give this recipe a try!
