Summer’s favorite treat, in cookie disguise!

These cookies were born one Sunday afternoon while Austen was napping. It was perfect timing because I had run 2 miles in the morning, was quite low on sugar despite a big lunch, and we had planned on biking when she woke up. You know, one of those gorgeous summer weekends where you just want to do everything with the little time that you have.

Let me tell you these cookies came out of the oven and I gulped at least 3? Don’t even remember it. I was munching and snapping pictures… it was pure joy. I had plenty of cookie-power running through my system during that bike ride, which ended up being 10 miles. I covered quite some ground that day.

So I’m telling you, you will want to have more than one, but that’s okay, just try not to do it on the daily 🙂

Ingredients:

  • 1 egg
  • 1/2 cup any creamy nut/seed butter (128 g)
  • 2 tbsp honey or maple syrup (42 g)
  • 1/2 tsp vanilla extract
  • 1 cup all purpose flour or other wheat flour (120 g)
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt (if your nut/seed butter is unsalted)
  • 2/3 cup mini or chopped marshmallows (30 g)
  • 2 full graham cracker sheets broken into small pieces (31 g)
  • 2 tbsp semisweet chocolate chips or chunks (30 g)

Makes 12 cookies. Preheat oven to 350F and line a cookie sheet with parchment. Beat your egg and mix with nut butter, honey, vanilla thoroughly. This mixture should be liquid, not a paste. If yours turns into a paste, splash 1-2 tbsp almond milk (or any other milk) and mix. Whisk together the flour, baking soda, salt. Combine with the egg mixture to form the cookie dough (I use a spatula). Add the graham cracker pieces (try not to crumble these too much) and mini marshmallows. You can either fold in the chocolate or press on top. I tried both versions, they were equally satisfying! Make balls of cookie dough between your palms and flatten gently. Bake for 9-10 minutes until the edges start to have some color. Cool and enjoy!
