Apple Pie Parfait

An easy and healthy way to eat a protein packed breakfast that tastes like apple pie! No baking involved. Just a little bit of stove-top action!

Hi I’m a parfait freak. I’m a parfreak. A lot of my breakfasts and desserts lately are layers of yogurt/granola/fruit/nut butter. While I’m not proud of my obsessive ways, I can’t help but think that for a food maximalist like myself, a parfait is basically the dominant strategy when it comes to breakfast/dessert.

That first bite where you dig your spoon and get a little bit of each layer, all the different textures and flavors blended together and your mind is blown… Not a lot of other ways of preparing breakfast/dessert allows you to do that.

My husband Gav values sameness. He likes a smooth texture and single flavor. Like chocolate ice cream or creme caramel or a mousse. I like variety, I like a little bit of EVERYTHING, stacks on top of stacks of weird combinations of things (don’t get me started on my favorite peanut butter banana grilled cheese sandwich! the best!) and a parfait is basically that. The more layers the better!

But for you more normal humans’ sake, I kept this parfait simple-ish. Only 4 layers: Granola, strained greek yogurt, yummy cinnamon sugar apple, chopped nuts. The cooking of the apple is absolutely essential here, it’ll make you think you’re eating apple pie for breakfast.

Just between you and me, here’s my favorite part of all this. If you prep this ahead of time and let it sit in your fridge a few hours (or overnight), the granola will soak up any excess liquid that’s in the yogurt. The yogurt will become so thick it’ll basically turn into cheese, and the granola will soften and turn into a sort of graham cracker crust… so then your apple pie parfait will become an APPLE PIE CHEESECAKE. Yeah if you’re not psyched about this parfait now I don’t know what else to tell ya. Don’t tell me you’re not a cheesecake person! Just don’t!

Ingredients:

  • 1 large apple, whichever you like, peeled, diced (about 200 g)
  • 2 tsp coconut or brown sugar (8 g)
  • 1/2 tsp ground cinnamon
  • pinch of salt
  • 1/4 cup water
  • 1/2 cup greek yogurt, I use 2% (112 g)
  • 1/2 cup granola of your choice (60 g)
  • 2 tsp chopped walnuts or pecans (14 g)

Makes 2 breakfast parfaits. In a pot mix apple, sugar, cinnamon, salt, water and cook on low heat for about 15 minutes until apples are soft. Let cool. Layer in two jars, granola, yogurt, apple, walnuts. Enjoy!

They should keep for a few days at least in the fridge. If you didn’t somehow gobble them up of course.

  1. Can I just say THANK YOU for using grams in your recipe ! It’s so frustrating to always calculate how many there is in a cup, so thank you so much for thinking of us non americans and thank you for all those delicious recipes !
